Singapore's Hidden Gems: Discover the City's Most Unique Bars

Singapore's bar scene is flourishing, offering more than just the usual cocktail haunts. For those seeking a truly unique experience, look no further than these niche bars, each boasting a distinct personality and a curated selection of drinks and bites.

Big Wine Freaks is a newcomer on the scene, bringing a passion for sustainability to the world of wine. This Bukit Pasoh Road haven boasts an impressive collection of over 500 labels and 2,000 bottles, sourced from organic and sustainable vineyards across the globe. From classic French regions like Jura and Loire to lesser-known micro farms and innovative producers, there's something for every discerning palate. Accompanying this remarkable wine list is a seafood-focused menu featuring delicacies like Japanese tuna, oysters, uni toast, and king crab.

Dragonfly, the Singapore outpost of the acclaimed Hong Kong bar, offers a captivating blend of 19th-century art nouveau charm and modern cocktail artistry. Designer Ashley Sutton has meticulously crafted a space that feels like stepping into another era, complete with stained glass dragonfly centrepieces, blue-green floor tiles, and thick velvet curtains. Morgan Raelin Barron, a veteran of award-winning bars like Jigger & Pony, heads up the cocktail program, delivering an imaginative menu dubbed "The Cause and Effect". Guests can explore seven categories of spirits and liqueurs, each offering a classic, a refreshing lighter option, and a bold, spirit-forward creation. Standouts include the High Mountain, a sophisticated blend of Oolong vodka, St. Germain Elderflower Liqueur, Liquore Strega, fortified vermouth, and honey, and the unconventional Murphy’s Law, a house-crafted dark rum with sweet corn ice cream, infused with mala oil for a unique flavour experience.

Sugarhall, the rum-focused cocktail pub from Jigger & Pony Group, offers a warm and inviting neighbourhood pub atmosphere. Nestled in a 1920s heritage building near Raffles Place, Sugarhall embraces the homely vibes of a local hangout, with a menu of classic cocktails featuring feature rums and spirits, and satisfying pub fare done right. The signature Dark & Stormy gets a local twist with Hampden 8 Year Aged Overproof Jamaican rum, fresh lime, and “I Shot the Ginger” ginger beer. For a truly unforgettable experience, try the One Punch Rum, where guests can pour their own mix of Appleton 8 Years, Mount Gay Ecplise, Gosling’s 151 proof rum, passionfruit, cinnamon, and soda.
